Good only exists because evil does. Evil is when you ride over the
freedom of others for personal gain, or the gain of your
Patron/Master/Friend. "Good" exists because a few of the neutral people
- the people that only wanted to be left alone - got sick and tired of
it, and decided to band together and attempt to wipe out evil forever.
We do not pretend that we will ever succeed at it, it is as you say,
quite impossible. But we know that through our actions others (who are
as we were once) may be able to live the lives of peace we wanted for
ourselves. And we hope that if we survive to old age, we can retire and
others will fight so we can enjoy the final years of our lives.

Just because evil will never be completely destroyed, does not mean the
fight is in vain. You said: "...You gain power and wealth by claiming to
save souls, while you really only confiscate their freedoms and
rights..."

If goodness is acting as it should, it is about preserving the freedom
of others. In the case of the orphans, they are not forced to join the
choir. They follow willingly to the choir, and they know that the choir
is for them should they choose to follow. In the case of the orphans of
Ashtan, they follow because they believe it is an ophanage, a place to
sleep and eat. They go to their deaths unknowingly. You might say they
would choose it willingly - but if you truly believe it, why dont you
tell the orphans the truth, and offer them the choice to stay or go once
again?
