Holy - Spiritually pefect or pure / free from sin / perfect in a moral sense
Chivalry - The qualifications of a knight, as valour, nobility, fairness, courtesy, respect for women, protection of the poor, etc
I would assume that to draw upon their holy powers, the would actually need to act in such a manner, rather than the honourless brigands they normally act as. A demon as a holy man, just strikes me as odd.
