Yes, it is your shop, to buy and sell as you wish, to stock as you wish, to price as you wish. Before you rant and rave at those who do such things, recognize that every class and guild that has a publically marketable, tangible craft has now tried at one time or another to limit or price their saleable items in some way. You are ranting against the world as a whole, saying 'It should be different'. Perhaps it should. But without a solution that benefits both seller and buyer, from creation to use, you are doing little more than adding that much more senseless noise into the void.
You are certainly free to price as you wish. Take venoms, for example: you know the consequences of your actions, but feel free to price them at, say, 500 gold a vial. No skin off my nose -- remember, you are aware of the response awaiting your actions. Cause and effect, girl, is a wonderful thing.
As to things that won't sell -- how many folks do you know that buy slipper? Oculus? Hand axes? Certainly, you can stock them and price them in your shop. Many already do. But the market for them is small, and thus, they don't sell much. Does that stop you from stocking them? No, of course not.
As to those hard workers you are asking to stand up and declare -- have you ever sat down and tried to forge anything? Milk anything? Have you ever spend days wandering the caverns looking for one more piece of moss?
Think on it.
